What we are eating this week...

Menu for this week...

Monday - crab legs, pasta salad and spaghetti and salad for the girls (this was a semi-special occasion as I purchased crab legs on sale at Central Market and steamed them for Coley)
Tuesday - Leftover Spaghetti with Italian Sausage, Salad
Wednesday - Chicken Fajitas
Thursday - BBQ Chicken, Broccoli (cooked in crockpot)
Friday - Taquitos, Cheese Quesidillas, Veggies
Saturday - Green Chile Cheeseburgers with Sweet Potato Fries

Landri and I have also been having a baking/cooking/prep day each Monday. Today we made Dark Chocolate Granola, Banana Coconut Muffins, Spaghetti Sauce, Pizza Sauce and Pasta Salad. We will eat on this stuff all week. I was also able to freeze a bunch of Spaghetti Sauce and Pizza Sauce.

Rain, Carpet Ripping, More Allergies

I could not begin to tell you how my family has been fighting allergies! Grrr!! We have all been sick. Let me say this...with the swine flu and the regular flu going around I am sooo thankful that we haven't gotten it yet.

After Paige's baptism I chose to get her and Landri into a pediatric allergist. So we went to the big city and were able to see Paige's ENT who is also a pediatric allergist! Yeah! We love him! Great kid doctor! He put the girls on a nasal sinus rinse, nasal spray, strong allergy medicine and told us to kick the dogs outside and get the carpet out of our house ASAP. Yes, rip the carpet out! Actually, we've know that we needed to do this because Coley's allergist also highly recommended it. With the humidity being so high where we live and the allergies being bad it just compounds the problem when you have carpet in the house. So rip it out we did...well actually Coley and our good friend Tommy did.

So we have been on concrete for over a week now. We still have allergies...the amount of dust in the house was incredible which made it worse...but the girls are better...me not so much...but hopefully we are on our way to a better and cleaner household. I am looking into cleaners, air filters, etc. that could help us out as well.

Did I mention the rain? It has rained and rained and rained...we have gotten 8 inches or so in the last week. Yeah God! We are thankful especially since it hasn't rained all year even if it has made the allergies worse.

Coley has been working a ton of hours this week...which is interesting because most of the construction sites are shut down because of the rain. God is providing! He is so good. We have discussed it and prayed about it and really want to pay cash for our new flooring and then the work just starting piling up! Praise God!

Paige's Baptism


I am so late in getting this posted I am a little embarassed. My only excuse would be...allergies...more allergies. We have all been fighting snotty noses, cough, runny eyes, etc. So with all that wonderful information out of the way - on to the baptism.

Paige was sick all weekend - fighting off allergies - in a big way, but we told her that not matter how bad she felt she was getting dunked because our family had all traveled in to be here. So she was on board!

We also combined the weekend and celebrated Pepper's 55th Birthday and MeMe and Pepper's 34th Anniversary. So it was a sweet weekend. Saturday night we took everyone to a BBQ place in the hill country that is known for their ribs and let's just say that they didn't disappoint. The food was amazing and we had a fun time with the kids enjoying the live music and just eating together. One of my favorite things about my family is that growing up we always had dinner sitting around the table. It forced us into conversation with one another - made us spend time together - and now has become one of our favorite times together.

Sunday was Paige's baptism so we had a "green chile festival" for lunch and Coley's family joined us. I had bought fresh roasted green chiles from Central Market so we had to share in the goodness! Afterwards we celebrated with cake and prayed as a family with Paige praising God for his goodness and a day to celebrate her Christian birthday. We made it a big deal - because it is! Yeah! Everyone bought her a small gift marking the importance of her choice.

Sunday night we went to the river and along with Paige there was a several others who were also baptized. Coley got to perform the baptism with our pastor speaking to the crowd. Sweet moment. All of the kids were lined up on the river bank captivated by the scene. I cried. It was a completely peaceful, joyful and AWESOME moment! We had begun praying before Paige was born that she would accept Christ at a young age and grown in wisdom and obedience to live a life that honors God. It was so good to have my family and Coley's family join us in this day.
